Resumo

The objective of the work is to identify, analyze and design a ventilation and exhaust system suitable for a large industrial kitchen located in the industrial district of Manaus, as well as air conditioning the internal environment for customers. For this, studies were carried out in the areas of heat transfer, refrigeration and air conditioning and mechanisms that allowed the projection considering the climate of the region, all utensils used in the kitchen that generate heat such as ovens, roasters, stoves, all appliances and electronic objects. that are part of the kitchen, arrangement of walls, windows, slab and geographic position generating precise calculations for this environment. It was also found that the temperature in the work environment directly affects the performance of employees, an environment without adequate air conditioning and the maintenance of air conditioning equipment generates discomfort, respiratory diseases that appear at first as fatigue and can evolve into something more serious, employee unhappiness and lower-than-expected production, so the project also aims to improve the quality of life in the work environment (QWL). Another problem that will be solved is air pollution in the environment, thanks to the use of exhaust fans, the workplace will have less smoke in case of any food burning, it will minimize problems with bad odor or any discomfort that this air dammed up in the environment. can provide.
