Resumo
Jenipapo is the fruit of jenipapeiro, which is present in practically the entire American continent. It has several functions such as food, beverage production, some regions even use the fruit dye for body paintings. It has medicinal functions and is sometimes used for lung diseases. A unique characteristic of the fruit that in its green phase it produces a navy-blue dye that is given through the reaction of the air with the genipin, and this bluish colorand difficult to obtain in a natural way, the dyes used of this color are in artificial sum. The objective of this work was to study the concentration of genipin using the pulp of jenipapo, exposing it to different types of lights so that it could be observed how its degradation would occur. The jenipapos used in this work were provided by the feira do produtor in the east of Manaus and were taken to the LABORATORY LEQ 2 in the School of Technology - EST. To perform the experiments, 3 factorial planning of 23 duplicates was made. The variables studied were time (24 and 48 hours), pH (5 and 7) and lamps (Fluorescent, infrared and ultraviolet), which generated a genipin concentration through the absorbance of the samples using the ethanol method with stabilized pH. After the readings, the Statistica version 13.5 program was used to analyze the effects of the variables, which generated some response graficos and Pareto grafics, that at the end revealed that the pH had little influence on the concentrations found and that ultraviolet light has no distinction in relation to fluorescent, because only time was a primary factor in this stage. It was also found that comparing exposure to infrared and ultraviolet light, ultraviolet has been shown to have a higher degradation power since its exposure generates more heat compared to infrared and that exposure to infrared light was the one that least generated degradation of genipin concentration. At the end of each planning, a mathematical model was obtained that expresses the genipin concentration according to the variables studied.
