Resumo
The present study started from the observation carried out in full-time elementary schools
of the State Education Network, in the city of Manaus, during three semesters of the
University, corresponding to stages I, II and III. Its main objective is to research the rules
for manipulating school meals and the relationship with Health Promotion (HP). The work
was divided into three stages: firstly, in the theoretical framework, a brief history of school
meals was carried out, bringing information about those responsible, managers and
enforcers of its standards with some booklets, guiding documents and, the Health
Promoting School will be part of the study . The Health Promoting School brought a new
perspective to the issue of school health, as several aspects are involved, such as child
development, environmental conditions, the coexistence of family and society, skills such
as knowledge and security. Second, the case study methodology will be based on
observations and interviews carried out in the school environment. Thirdly, the results,
in which they were analyzed and discussed with the techniques put forward by the bodies
responsible for standardizing practices and mandatory laws defined by Brazilian bodies.
It was noticed that there are norms and rules, but that there is a deficiency in applying
and supervising them. As for the experience in the School of Study, it was observed that
there is much to be done in relation to the training of people involved in school lunches,
as it is through them that you can insert or maintain a Health Promoting School (EPS),
therefore, this study it was relevant to be able to observe the work of important people in
the educational context, such as lunch ladies, but who end up being forgotten by many
inside and outside the school. We hope that this research can contribute to new
discussions inside and outside the academy, leading to all thoughts of reflection, inquiry
and change regarding healthy eating in the educational environment.
