Resumo

This work is the result of a survey carried out in hotels in Manaus, aiming to show how gastronomy is shown and treated in the hotel environment of the city, such research becomes important that an analysis can be made of how regional gastronomy is being offered and explored in the hotels of Manaus and how it can be improved the offer of the regional foods, in addition it appears like proposal of a new form to offer the tourism, through the gastronomic tourism, to the tourists who visit our city, since many spend few days in the city without much time to leave the hotel and enjoy the manauaras beauties. The methodology used in this study helped to verify the accuracy of the data acquired, due to the resources, the contingencies and the time available. The aim was to better match the objectives with the questionnaireThe results show that most of the hotels that responded to the questionnaire failed to offer tourists regional items due to the dubious origin of the material until arriving at the establishment, which ends up impairing not only the hotels restaurants but the poor guest's view of the gastronomy amazonense.
