Resumo

Despite the practical knowledge in the production of the flour, we do not have documents or recipes regarding the preparation, or even records that can support the emergence of this food. Based on this observation, we seek to address the production of manioc flour, and to understand the role of women in the production of flour in the São Bonifácio Rio Miriti / Marau Community. Nowadays, there are still doubts about who produces it, that is, whether this production is the responsibility of the indigenous man or woman as well as knowing the whole process of the flour until it becomes healthy food consumed at meals. In order to better contextualize this theme, we use some theoretical notes about the term flour production in the view of authors who study this area of ​​knowledge, such as: Amaral & Vieira (2009), Torres (2014), Kauss & Peruzzo (2012), Silva (2015). Followed by methodological delineations with the qualitative ethnographic participant approach, with results obtained through interviews with the application of questionnaires. The results revealed the importance of women in the production of flour, taking into account the customs and tradition inherited by a certain people.
