Abstract

Industrial processing is a necessary aspect for the commercialization of reliable products with recognized quality, and every food company follows sanitary protocols. The objective of the work is to characterize the industrial process of fish processing in a company dedicated to this activity in the city of Parintins, describing the structure, location, quantities of goods received and dispatched in a year and its technical procedures from entry to unit output. The methodology was carried out in two stages: periodic technical visits to the site for a year, obtaining data directly from the company, monitoring the process of receiving, producing and shipping the fish with the application of a questionnaire and interviews with the responsible sectors in the company to obtain primary data; and there was also the collection and analysis of secondary data obtained from the Municipal Department of Livestock, Agriculture and Supply of Parintins (MAPA) on the financial aspects and the quantity of fish registered destined for fish trading houses in Parintins. The results point to high compliance between the protocols adopted by the company and the technical regulations of fishing and fish processing management bodies in Brazil. There is a commitment to selecting specimens for sale and consumption, as well as a production line to select, treat (removal of scales, viscera, etc.), pack, store, transport and distribute, generating reliability in the product through well-processed processing. scripted and properly organized. The general income (in millions of reais) during a year from the sale of fish is an important factor for the PIB of the city, allowing jobs and boosting the local economy. There is a diversity of species in the commercialization of regional fish, allowing production throughout the year, even in the off-season, enabling sales both locally and for export nationally and internationally, generating a financial turnover in the city. In any case, the economic aspect involved in fishing activity is of utmost importance for Parintins, being one of the sectors that is developing the most at an accelerated pace.
